What's for dinner?
Hmm... I'm trying to think about what's in my refrigerator. Chicken breasts, a bottle of Pom, goat cheese, baby spinach...) so here it goes...
Goat cheese stuffed chicken breasts with a pomegranate reduction over a bed of spinach and slivers of fresh garlic that I'll saute in a little bit of olive oil. Never tried it, but the flavors/textures sound right. The only thing I might do different is scratch the garlic and just wilt the spinach with the heat of the chicken and a splash of vinegar, rather than sauteing it, to keep the flavors bright and light.

Looks like a bowl of cereal is in my future. Probably Cinamon Life, but maybe it will be a Fruity Pebble kind of night.
Trader Joe's peanut butter crackers and strawberry yogurt. Awesome.
So sticking with my Trader Joe's theme for this week, we grilled out their buffalo burgers. We had baked sweet potatoes, and also grilled the following veggies: red pepper, onion, squash, zuchinni, and mushrooms.
We decided we don't have to buy the frozen patties again. I thought they were ok, but I can make my own much better. My hubby wants me to find one of those recipes where you put something in the center of the burger like cheese.....
Such a non-foodie night for me - I had a slice of leftover pizza while my boyfriend and I watched The Office. When an ER promo came on, he said, "That's John Stamos!" I said it couldn't possibly be, and we went back and forth until he finally said we'd bet on it.
So his dinner was a Big Mac meal, paid for by me. :)
You cook the way I do - see what's on hand and get creative. Some tasty dishes have occurred, as well as a few 'nope's'. Since I cook for just me, I have more latitude to experiment, and love to use up a spoonfull of this, and a slice of that.
