Gotta love chocolate pudding
Lately, it seems like I've been living on Jell-O sugar-free chocolate pudding. My only complaint is that it tends to get kind of soupy after it sits in the fridge. I made some the other night, and had a thought ... what could make this better? I grabbed a package of fat-free cream cheese, softened it, and blended it into the pudding just after I added the milk to the mix (one package of cream cheese for 2 packages of pudding). Then I chilled it for about a half hour. And it was AWESOME. I topped it off with my latest find, sugar-free Land-O-Lakes whipped cream (in a can like Reddi Wip!).
