Potluck prize

So the online folks at Cincinnati.Com had a little potluck action going last Tuesday, and I discovered a gem! My co-worker made a Moroccan Pasta/Grain Salad, and it was TOO yummy.

It's a cold salad, and since it's going to get all Spring-like on us this week, I thought this would be a perfect side dish for a grill-out. I used the orzo, mainly because I couldn't find wheat berries on short notice. If you find a place in Northern Kentucky, or close by, that carries wheat berries, please let me know!

The recipe, so that I don't take up so much space here, will be the first comment under this post.

Coming tomorrow: I've never tried a bean-based veggie burger, but tonight's the night!

Moroccan Pasta or Grain Salad

Dressing:

1/4 cup olive oil
2 Tbl. lemon juice
1/4 tsp cinnamon
1/8 tsp mace
1/8 tsp cardamon

Salad:

½ lb. orzo OR 1 cup wheatberries, cooked
1 can garbanzo beans, drained
¼ cup diced onion, preferably sweet
¼ cup diced red and/or yellow pepper, roasted or raw
2 cups kernel corn, cooked frozen, fresh or canned
½ cup craisins and/or dried mango
¼ cup sliced almonds

Whisk dressing ingredients together; set aside. Mix cooked pasta/grain with the garbanzo beans and the dressing, then mix in the rest of the salad ingredients. Serve cold.

Notes: Orzo takes about 10 minutes to cook; wheatberries take about 3 hours with a slow cooker, but it's almost carefree because you are very unlikely to burn them. They both cook in about 3 cups of water. Also, for the sake of the presentation, you may sprinkle the craisins and almonds on top, then mix in when it's time to eat.
